Repeat Everything

The thing about self image and value being completely thoughtful and not at all ornamental, and we have all done this in some form, is that you will continue to keep reaching for something in exchange of fulfillment - after this car I’ll be good, after this handbag I won’t need anything else. But it goes and goes and goes until not only are you overwhelmed with things or cycles, the mirror remains uncomfortable. Nothing of matter can quench the thirst of an able bodied mind. It is very simple and becomes satisfied only with necessary organization. May we exercise those muscles dutifully before the clock goes quiet.

Roasted chicken over citrus and leeks with cooked orange and onion slaw salad with Brightland's Everyday Cooking Oil Brightland Everyday Cooking Oil is a pantry staple for me with its quality of taste and cooking ability. I reach for this for everything - whether I’m roasting, sautéing, or prepping ingredients to go on the stove or in the oven. It has a clean, balanced flavor that lets the food shine while still tasting really good. Slice three oranges and one lemon into quarters and display on the bottom of a 9x13 in a baking pan. Trim and wash three leeks and slice into small cylinder pieces, and cut in half again. Add to the pan. Rinse and dry a 3 lb chicken, and place over your citrus and vegetables, layer on 6 tbsp salted butter cut into individual pieces, and as many castelvetrano olives as you’d like. Douse everything thoroughly with Brightland Everyday Cooking Oil - from roasting to dressing to finishing, this is a pantry staple for me with its quality of taste, and cooking ability. Season with lots of salt and freshly cracked pepper. Bake in a 425 degree oven until the internal temperature is 170, an hour roughly. For your salad, slice thin one navel orange, one small onion, and 1/2 head cabbage. Heat a large pan and add 2 tablespoons of butter, and lots of Brightland Cooking Oil. Sauté orange and onion until caramelized, tender, and fragrant. Place cabbage in a large bowl and layer cooked orange and onion. Add flat leaf parsley, and tons of freshly grated parmesan cheese. Douse in Brightland everyday Salad oil for your dressing, and season with salt and freshly cracked pepper. This gets better with age!!! To plate, top slaw with chicken, its juice, and the cooked leeks and olives. Best bites!
Lunch plate Plain yogurt with castelvetrano olives, chili oil, parsley, salt, and pepper, two farm fresh jammy eggs, roasted Japanese sweet potato, sugar bee apple. Potato - slice into large chunks or coins and coat in olive oil, nice salt, freshly cracked pepper. Bake in a 475 degree oven for 25 minutes. Flip and bake for another 5 or so, or until perfectly golden and caramelized. I prefer them almost burnt. Jammy eggs - bring small pot of salted water to a boil and lower in eggs with a slotted spoon. Set timer for seven minutes, reduce heat slightly. Remove eggs and place into an ice bath or under cold running water to peel. FYI the yogurt / olive / chili bite with potato is really perfect.
One bag unsweetened coconut flakes blended into coconut butter, mixed with one bag semi-sweet chocolate chips melted, makes a delightfully gritty textured, melt in your mouth homemade chocolate bar. Transfer mixture onto a parchment lined pan and freeze until hardened. Remove and top with flaky salt. Chop. Store in airtight container in the fridge.
Cabbage, apple, parsley, mackerel, parm, pepper
Shred 1/4 cabbage and layer on one sugar bee apple thinly sliced, a handful of flat leaf parsley chopped, one tin mackerel, and tons of grated Parmesan and freshly cracked pepper. Pinch of salt, a few pours of olive oil, and champagne vinegar for dressing. Sweet, savory, juicy, crunchy.

Commandments for simplicity and goodness, no matter what -
1. Repeat everything. When our children are little we repeat everything back to them in question form with a light voice and coo to help them learn and to reiterate their pronunciation and confidence. Somewhere along, in their growth and our lessening of reigns, we stop. I have started again in effort to provoke the thoughtfulness that comes out of their mouths, the ideas they have - whether it is an opportunity to
