A woman I work with kept telling me about her obsession with three ingredient almond flour cookies, so I went home to make some… only to find that I was out of maple syrup (one of her recommended three ingredients). In efforts to keep it simple and still eat immediately, I threw the below into a bowl, assembled some sort of edible shape onto a baking sheet, and was pleasantly surprised with a single serving, perfectly medium rare, graham cracker-y mound, begging for a scoop of ice cream. It smells like a doughnut when baking, and tastes like a giant s’mores treat by the spoonful.
