Adapted from my single serving graham cracker cookie… these are shareable and already very loved by family, Isaac’s teacher, and the entire restaurant staff where I work a few nights each week.
Also, the batter is really hard not to eat.
Ingredients: 2 c almond flour 1 c unsweetened coconut shreds 4-6 tbs coconut sugar (for desired sweetness) 1 c pecans (I like biting into a whole one, but you can chop them too!) 1 c semi-sweet chocolate chips pinch salt 1/2 c maple syrup 4 tsp vanilla extract
In a bowl, mix your dry ingredients except for pecans and chips. Add wet ingredients. Mix. Now add your chocolate and nuts and combine. Use a small scooper to transfer to a parchment paper lined cookie sheet. Bake at 350 for 15 min. Sprinkle with Maldon salt when they come out!
